Tarragon is an aromatic soft herb with slender green leaves and a sweet, mild aniseed note. French tarragon is the variety chefs prefer.

Used in British kitchens for classic French sauces such as béarnaise, plus chicken, egg and fish dishes. Excellent infused into vinegar or softened butter.
