What is Rhubarb?

The edible pink-red stalks of the rhubarb plant, tart and fibrous, supplied by the case. Forced rhubarb is more tender and pink than maincrop.

Stewed and baked into crumbles, tarts, fools and compotes, and increasingly used in savoury sauces for oily fish and pork.
