A hard, knobbly, golden aromatic fruit related to apples and pears, too astringent to eat raw and always cooked. Sold by weight.

Slow-cooked into membrillo paste, jellies, compotes and tarts, poached, or roasted with game and pork. Cooking turns the flesh soft, fragrant and rose-pink.
